Cassava Cake Recipe ( a Filipino Dessert)
This recipe fits your budget. I made in in less than Cdn$10.00 including taxes.
2 eggs large
1 can cocounut milk (400 ml) available at Walmart or Produce Depot
1 cup brown sugar or white sugar
4 cups grated cassava (about 3 lbs available at Loblaws or Produce Depot)
4 tbsp melted butter or olive oil.
1 baking pan
Note: Cassava is also known as Yucca. Check your wikipedia.
1. Mix all ingredients in a bowl, mix very well so the sugar is spread evenly.
2. Pour it in baking pan.
3. Preheat oven at 350, bake for 30-40 minutes, until it looks lightly brown.
4. Let it cool down and cut in squares, ready to serve. Have it with tea or coffee.
Costing:
2 eggs = 50 cents
can of coconut milk 440 ml = 99 cents at walmart or produce depot, asian grocery store $1.29
cassava 3 lbs. = $1.49 to 1.99/lb; about $4.00
You get medium size 3 pcs, that will be about 3 lbs.
You peel the brown covering, then you get a white flesh root.
You can use a cheese grater to grate your cassava.
You can do this ahead of time.
Tips: Mixing the ingredients.
I started with beating the two eggs in the bowl, then add the coconut milk. Stir well.
Then I add the sugar, olive oil, then the 4 cups of grated cassava.
I mixed it very well before pouring it in the cooking pan.
Some varieties of this recipe includes caramel toppings. Yummy!
